Black Bean Salad

Instructions
In a small saucepan bring vegetable broth to a boil, add quinoa, stir frequently until broth is absorbed, which should be around 15 minutes. Remove from heat, rinse with cold water and set aside. Blanche edamame in hot water or zap it in mircrowave, but don't overcook. In a large bowl, combine beans, corn, edamame, bell peppers, serano peppers, onions, cilantro, parsley, hempseeds and cooled quinoa. In a jar with a fitted lid, combine oil, lemon juice, garlic, cumin, chili flakes and salt and shake well. Pour dressing over mixture and toss to coat. Store in refrigerator for up to 5 days.
